Sometimes you just need something nutritious and delicious and you don’t want to cook. For lunch, I tend to like something quick and simple that won’t weigh me down. Fight the afternoon slump!
This avocado toast is everything but basic. What’s great about avocado toast is that you can start with just toast and avocado and build on as much as you’d like. In fact, I’d call this more of an inspiration post, rather than a recipe. For this version, I layered on peppers and tomatoes from our garden. We are getting to the point where we have multiple options of peppers and a steady stream of tomatoes, so I’m always looking for ways to use them.
