This is my healthy go-to side! It’s so simple, flavorful, and nutritious. As far as technique goes, you’ll want to be careful to slice your potatoes evenly, otherwise, it will take longer for some of your rounds to cook all the way through. You can adjust the amount of chili powder depending on your spicy preference.
This recipe will serve 4-5 people. I usually divide it in half for just my husband and me.

2 pounds sweet potatoes, peeled & sliced into rounds

3 tablespoons olive oil

1 teaspoon kosher salt

3/4 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper

1/4 teaspoon garlic powder

Flaky sea salt, for garnish
Preheat your oven to 450 degrees. Line a pan with foil. Spread your sweet potato rounds evenly in your lined sheet pan(s) (you might need two pans). Pour over olive oil and combine in the pan to thoroughly coat. Sprinkle the seasonings (saving the flaky sea salt for after cooking) and mix up again to fully coat. Be sure to spread the rounds out so that none are overlapping. Cook for 25-30 minutes, flipping the rounds halfway through cooking.
